Executive Chef – for a Luxury Hotel in Accra, Ghana

DWR Executive Search has been retained to find an exceptional and highly experienced Executive Chef with a specific and extensive background in the international 4 and 5-star luxury and business class, boutique hotel sector. This position is for expatriate applicants only. The Executive Chef will effectively control and direct the food preparation process and manage areas of profit, stock, wastage control, hygiene practices, menu management, and training.

The Executive Chef will be a cuisine ambassador for the flagship property of my client’s group of three luxury hotels in Ghana’s capital, Accra and ensure that it maintains its competitive edge in the hospitality industry. S/he will have a comprehensive and perfected international range of dishes in which they are expert in preparing, and perhaps a signature cuisine that they particularly excel at.

With a solid history and prestigious reputation, my client is an established and leading independent hospitality provider in West Africa. Their three luxury hotels are a major part of their business operation in Ghana, internationally recognised and of a supreme standard. MAIN DUTIES OF THE ROLE:

Food Preparation and Services:
• Ensure food is prepared in line with standard recipe cards
• Preparation of food according to well defined recipes and constantly improving the cuisine across the properties
• Provide direction for all day-to-day operations in the kitchen
• Actively involved in menu development and maintaining updated and accurate costing of all dishes prepared and sold in the Food and Beverage operation
• Frequently review finished products for quality and presentation before the orders are sent to guests
• Comply with nutrition and sanitation regulations, and safety standards

Effective Management of Kitchen Team:
• Trains, develops and motivates supervisors and culinary staff to meet and exceed established food preparation standards on a consistent basis
• Provides guidance and direction to subordinates, including setting performance standards and monitoring performance
• Delegates as appropriate to develop staff to accept responsibility and meet clearly defined goals and objectives
• Ensure sufficient staffing levels are scheduled to accommodate business demands
• Identifies the developmental needs of kitchen staff and provides coaching, mentoring, and helping them to improve their knowledge or skills

Timely Requisition of Orders:
• Coordinates with the purchasing department for the acquisition of needed goods and services
• Maintain quality levels of receiving, storage, production and presentation of food
• Plan orders of equipment or ingredients according to identified shortages
• Goods received in the correct process, signed, accounted, checked in a timely manner

Customer Service Excellence:
• Interacts with guests to obtain feedback on food quality, presentation and service levels
• Actively responds to and handles guest problems and complaints
• Provide a high level of customer service to members, guests, visitors and fellow employees

Compliance to Policies and Procedures:
• Review and update policies in line with SOPs
• Ensure compliance with standard operating procedures
• Ensure food intended for display in public areas is displayed neatly and attractively and at the appropriate temperature according to hygiene and safety principles and procedures
• Ensure no cross contamination occurs within the kitchen. Ensure kitchen is cleaned at the end of service period
• Ensure daily, weekly and monthly routine cleaning and preventative duties related to all FOH catering facilities are conducted to the required health standards

CONDITIONS:
This is an expatriate position and is offered on a single person status only. As a senior and important position that carries a high degree of responsibility, it is a prerequisite that applicants possess the required skills and experience to be considered.
