Food and Beverage Manager for a Luxury Hotel in Accra, Ghana
DWR Executive Search has been retained to find an excellent and very experienced Food and Beverage Manager with a specific and extensive background in the international 4 and 5-star luxury and business class, boutique hotel sector. The F&B Manager will be responsible for overseeing the daily operations of all food and beverage outlets within the Group’s flagship hotel in the heart of Accra. This role ensures that the department delivers exceptional guest service, operates efficiently, and meets financial targets. The successful candidate will manage the team, optimise operational processes, control costs, and maintain high standards of food quality and service. The role also involves driving sales, enhancing customer satisfaction, and working with the Food and Beverage Director to implement strategies that contribute to the department’s success.

KEY RESPONSIBILITIES:
Operational Leadership & Financial Performance
• Oversee Daily Operations: Supervise daily activities of food and beverage outlets, ensuring efficient service and smooth operations by achieving a 95% on-time service delivery rate across all food and beverage outlets.
• Financial Performance: Monitor department sales and expenses to ensure that the operation stays within budget by maintaining food costs between 25-30% and beverage costs between 18-22% of total revenue and a 5-10% increase in total department revenue year-over-year.
• Cost Control: Track and control costs of food, beverage, and supplies. Implement cost-saving strategies without compromising quality by reducing waste and spoilage by 10% annually. Achieve a 5% reduction in labour costs annually by optimizing staff scheduling.
Team Leadership & Development
• Staff Supervision: Manage the food and beverage team, including scheduling, performance management, and training. Ensure 100% of employees receive quarterly performance reviews.
• Employee Development: Provide coaching and training to team members to enhance performance and career growth. Facilitate at least 4 training sessions annually to develop staff knowledge and skills.
• Motivation & Engagement: Foster a positive and motivating work environment that encourages teamwork and high morale. Achieve a 90% or higher employee engagement score in internal surveys.
Guest Experience & Customer Service
• Guest Satisfaction: Ensure food and beverage services consistently meet or exceed guest expectations. Achieve a minimum of 4.5/5 in guest satisfaction surveys related to food and beverage service.
• Handling Guest Complaints: Address guest concerns and complaints promptly and professionally to ensure high levels of guest satisfaction. Resolve 100% of guest complaints within 24 hours.
• Service Excellence: Empower and guide employees to provide personalised, high-quality service to guests. Achieve a guest satisfaction rating of 85% or higher related to service quality in food and beverage outlets.
Menu Planning & Innovation
• Menu Development: Collaborate with the culinary team to create innovative and appealing menus that align with guest preferences and brand standards. Introduce at least 2 new menu items or seasonal offerings per quarter.
• Product Quality: Ensure that food and beverages meet the highest quality standards consistently. Achieve a customer return rate of 70% or higher for repeat guests in food and beverage outlets.
• Promotions & Events: Collaborate with the marketing team to develop promotions, seasonal menus, and special events that drive sales and attract guests. Increase sales from promotions by 15% during special events and seasonal campaigns.
Inventory & Resource Management
• Inventory Control: Oversee inventory management, ensuring proper stock levels and minimizing waste and spoilage. Reduce inventory shrinkage by 5% annually through better management and auditing practices.
• Ordering & Purchasing: Ensure efficient ordering and purchasing of food, beverages, and supplies. Work closely with suppliers to negotiate favourable terms. Maintain stock turnover at 4-6 times per month to optimize inventory levels.
Health & Safety Compliance
• Food Safety Standards: Ensure compliance with all health and safety regulations, including food safety and sanitation practices. Achieve 100% compliance with food safety audits and health inspections.
• Employee Safety: Maintain a safe working environment by ensuring adherence to safety protocols and staff training in handling food and equipment. Achieve zero workplace accidents and injuries within the food and beverage team.
Human Resources & Employee Relations
• Recruitment & Hiring: Assist in recruiting and hiring food and beverage staff members to ensure the team is adequately staffed and trained. Ensure 90% of open positions are filled within 30 days of vacancy.
• Performance Management: Conduct regular performance evaluations and provide feedback to improve team performance. Achieve a 100% completion rate for performance evaluations for food and beverage staff.
• Employee Recognition: Recognize and reward employees for outstanding performance and contributions. Implement a monthly employee recognition program to boost morale and motivation.
Additional Responsibilities
• Communication: Ensure clear and consistent communication within the food and beverage team and with other departments. Conduct bi-weekly team meetings to review performance, challenges, and opportunities.
• Reporting: Prepare and submit regular reports on financial performance, guest satisfaction, and operational issues to the Food and Beverage Director. Submit weekly reports on operational performance, guest feedback, and financial metrics.
Fluency in written and spoken English is essential. A second language (preferably European) will be a plus.
